What are some tools to capture HTTP requests and responses ?

You could use a packet capture tool such as WireShark/Ethereal
(www.wireshark.org) or Microsoft Network Monitor
(www.microsoft.com/downloads).

Or you could use a HTTP proxy tool (such as HTTP Fiddler)

If you are initiating the Request, then WFetch could be used.
