Sizing MX servers: examples required + One quest. on maillog entries

I was looking for examples about sizing linux servers running sendmail as
MTA, considering "incoming traffic".
In the while I was trying to analyze my log files to understand the volumes
of incoming traffic.
I would like to ask: how could I get the traffic load from maillog?
Well, counting " From=" lines (say WC1) and " To=" lines (say WC2),
approximately would you say that the difference between these two values are
blocked email? (Note: check_relay and check_mail are not considered while
check_rcpt are included, in this evaluation. Lines with " to=" means also
other mail errors which are included)
