My Server HD has crashed - How do I retrieve the MySQL data, and a new
HD up and running with Apache etc running again, as per original

No problem

Big problem - as the crash happened when doing my monthly backup. Ok I
have only lost the last months worth of data, but I would like to try
and retrieve the data, and retype it all in.

Any constructive ideas.

oops :/
Hard Drive rescue will depend on:
- type of failure
- file system (FAT,NTFS,UFS,...)

You might want to try mounting the HD, read-only, on a computer and boot
on a rescue OS.

Copy the data back from your slave server. (you do replication don't you?)

get the hard disk tools from your hdd manu. try them.
hot tip: get spin rite from www.grc.com, try that, it uses the chips
onboard the disk to mark off bad sectors, and is able to recover even
stubbornly dead disks. Don't rip it, buy it and then if you benefit
great, if not get your cash back.
try sticking it in fridge for an hour - then rinse and repeat above -
dont laugh

your disk "crashed" by that do you mean "doesnt get recognised by
windows OS or bios during boot?"
if it does get recognised, try a check disk on it as slave.

what disk is it, details. some we be completely recoverable depending
on error.

I'd be careful with your words on this group, most will go off and wash
their hard drives down with water after pulling it out of the fridge now.

Never ever backup, it causes hard drive crashes!

You could try the following tools:

PC Inspector File Recovery for Windows only
http://www.pc-inspector.de/default.htm?Language=1

Trinity Resource Kit for Linux and Windows
http://trinityhome.org/Home/index.php?wpid=1&front_id=12
