procmail or client sanity check

I am an email newbie. I'd like to set up a daemon that watches an email
account (share mine or a separate dedicated one) and logs stuff about
what email arrives from a particular email list. Email arrives, daemon
sees it and logs it. Do I need procmail or would a powerful client be
good enough? Where do I begin? mutt? pine? ??? Which FM should I start
R'ing?

What exactly are you thinking of logging?
have a look at the man pages for formail.
